Food-borne illnesses are infections caused by consumption of food contaminated with microorganisms or the toxins released by them. The food industries are using chemical preservatives to inhibit the growth of disease-causing food-spoilage microbes but increase in food consumption with added chemical preservatives causes lot of toxic effect on human health. So present day food industries are looking for bio-preservation which is a natural method of food preservation carried out by using microorganisms or their natural products. Lactic acid bacteria are general considered to be food grade microorganisms which was secure for human consumption. Bacteriocin was one of the antimicrobial peptide produced by LAB which received greater attention as natural preservatives. In this study, 10 bacterial colonies were isolated from dairy samples out of 10, 6 colonies were assumed as LAB upon identification by staining and biochemical test. Bacteriocin was produced, purified and tested for antimicrobial activity against food borne pathogens and subjected to sequencing, upon sequencing the strain was identified as Enterococcus durans.
