Bottle gourd known as Lagenaria siceraria, and Lauki in Hindi, is a common vegetable in India. Bottle gourd has been used traditionally to help with many health conditions like fever, cough, pain, and asthma. This study aimed to develop bottle gourd papad, nutritional quality. The product was analyzed for major nutritional constituents that is protein, moisture, fat, ash, carbohydrates, crude fiber and sensory evaluation (on basis of 5 point hedonic scale). The Nutritional analysis of Bottle Gourd Papad showed Carbohydrate (71.6 g/100g), low levels of Fat (1.6 g/ 100g) and a Moderate amount of protein (9.7/100g) and moderate amount of moisture (11.9 g/100g) and the Ash content (5.0 g/100g). The microbial parameters analyzed followed the guidelines specified by the FSSAI Manual. The Total plate count were in acceptable limits, and it is indicating satisfactory hygiene standards.
